Taquitos Over Rice & Beans
Serves 12
Ingredients:
- 24 El Monterey Taquitos
- ¼ cp Olive oil
- 2 White onions diced
- 4 stalks Celery diced
- 2 Green Bell pepper diced
- 1 TBL Garlic fresh crushed
- 1lb Ham diced
- 1 tsp Thyme ground or whole leaf
- 1 tsp Oregano ground or whole leaf
- ½ tsp Cayenne pepper
- To Taste Black pepper & salt
- 1 ½ lbWhole beans (pinto or red)
- 2 ½ lbMexican Rice (hot and cooked)
- 1 quart Chunky red salsa
Directions
- Heat up taquitos according to the instructions on the package.
- In a large sauté pan heat up olive oil and sauté onions, celery, peppers, and garlic until onions are translucent.
- Add ham and seasoning and continue to cook until ham is slightly browned.
- Add beans, cooked rice and mix ingredients well; continue to cook until steam starts rising from pan and all ingredients are hot.
- Spread rice mix to fully coat the bottom of a holding pan and arrange hot taquitos in pan and pour hot sauce over taquitos. Garnish with bacon bits, green onions, and cilantro. Serve immediately.
